Here’s what: Cook up some good quality bacon. Set aside. Save enough of the fat in the pan to saute up a little chopped onion. Until it softens a bit, maybe two minutes. Then add chopped up zucchini/squash to the pan. Salt and pepper too. After another few minutes, put in some chopped tomato. Cut your reserved bacon into bits. Stir veggie mixture around for another minute and then add in your eggs and bacon. Cook to the firmness you desire.
