Cut fresh pineapple into thin slices.
Melt butter in big ‘ol pan that you can put in the oven, like cast iron. Lay down the pineapple in a single layer. Sprinkle with sugar.
Pour favorite pancake batter over the top. Place in 375-degree oven for 10-12 minutes.
Comes out like this:

Top it with real maple syrup, maybe a hit of powdered sugar. Feed the kids; they’ll be happy.
Then make them clean up.
Enjoy!
